Aubergines tough & bitter? Before cooking salt slices on both sides & layer between paper towels. Leave for a while then wash off the salt.

I do that! I’m not sure if it makes much difference to toughness, but it definitely pulls out the bitter flavours.
I certainly think I should have tried it before making aubergine bake on Sunday.
