How do you like your eggs?
I like a runny yolk. If I’m buying a fried egg roll from a cafe I want the yolk to be runny, and to seep into the bread. Conversely, I prefer to be able to cut scrambled egg than to have it wriggle slimily down my throat.
However, it seems I may be in a minority. Whenever I buy an egg roll (in London at least) they seem almost deliberately to smash the yolk apart, presenting me with a slab of rubbery foulness squashed into a bap.
Fortunately scrambled egg is different, most cafes seem to cook scrambled egg into slabs; it’s generally the home-cooking purists who want me to endure it cooked ‘properly’ (ie slippery).

I couldn’t agree more about the egg yolk but have to admit to being a lover of slimey scramble.
